Instructions
Preparation
- Preheat the oven to 350°F (175°C). Prepare two baking trays with parchment paper.
- In a large mixing bowl, whisk together the melted butter, brown sugar, and white sugar until smooth.
- Add the egg, cornstarch, vanilla, salt, cinnamon, and nutmeg. Mix until the batter becomes glossy and thick.
- Stir in the baking soda. Fold in the flour, oats, and raisins until evenly combined with no dry flour visible.
- Scoop the dough into 22 equal portions using a cookie scoop or tablespoon, spacing them evenly on the baking sheets.
Baking
- Bake for 9–11 minutes, rotating the trays halfway through baking, until the cookies are lightly set but still soft in the center.
- Allow the cookies to cool directly on the baking sheets before serving.
