  • 113 g melted unsalted butter about 8 tbsp
  • 200 g light brown sugar firmly packed
  • 125 g creamy or crunchy classic peanut butter
  • 1 large cold egg
  • 1 tsp vanilla extract
  • ½ tsp fine salt
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • 128 g all-purpose flour about 1 cup
  • 170 g peanut butter chips or chocolate chips
  • 55 g salted peanuts roughly chopped

Preparation

  • Preheat oven to 350°F (about 175°C) and prepare an 8x8-inch pan by greasing it and lining it with parchment paper, leaving the edges overhanging.
  • In a large bowl, mix melted butter with brown sugar and peanut butter until the texture is smooth and creamy.
  • Add the cold egg, vanilla extract, and salt. Whisk until the mixture looks glossy and fully combined.
  • Stir in the baking powder and baking soda, then gently fold in the flour, being careful not to overmix.
  • Add peanut butter chips and half of the chopped salted peanuts, mixing until evenly distributed.
  • Pour the batter into the prepared pan and spread it out evenly. Scatter the remaining chopped peanuts on top.

Baking

  • Bake for about 25–30 minutes until the surface is golden and the center still has a slight soft wobble.
  • Allow to cool completely in the pan before lifting out using the parchment. Cut into generous squares once cooled.

Notes

These blondies store well in an airtight container at room temperature for up to five days. You can also freeze leftovers wrapped tightly in plastic wrap or aluminum foil.
