Irish Cream Fudge Ice Cream

Ingredients
  

Ice Cream Base

  • cups semi-sweet chocolate chips Use high-quality chocolate for best flavor.
  • 1 tablespoon salted butter
  • 1 can sweetened condensed milk (14 oz / 414 ml)
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon Irish cream flavoring or can substitute with ¼ cup Irish cream.
  • ½ cup half-and-half
  • cups heavy cream Ensure it's cold for better whipping.

Preparation

  • In a medium microwave-safe bowl, add the chocolate chips, butter, and sweetened condensed milk.
  • Microwave for 1 minute on high. Stir carefully and continue heating in 30-second intervals until fully melted and silky.
  • Mix in the vanilla and Irish cream flavoring.
  • Allow the mixture to chill for 10 to 15 minutes, until it cools to room temperature or slightly below.
  • Whisk the chocolate mixture again, then pour in the half-and-half and whisk until smooth.
  • In a separate bowl, beat the heavy cream with a hand mixer or stand mixer until stiff peaks form, about 1 to 1½ minutes.
  • Gently fold the chocolate mixture into the whipped cream until the base is smooth and even.
  • Transfer the mixture to an 8 x 8-inch pan or a similar freezer-safe container and spread it into an even layer.

Freezing

  • Freeze uncovered for 3 to 5 hours, or until firm. For a firmer texture, leave it overnight.
  • Cover any remaining ice cream with plastic wrap or foil and keep it in the freezer for up to 3 weeks.

Notes

Serve with drizzled chocolate sauce, sprinkles, or a dollop of whipped cream. Pairs well with chocolate cake or brownies. Store properly to maintain texture.
