  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced Use fresh garlic for stronger taste.
  • 1 cup grated Parmesan cheese Divide into two parts for mixing and topping.
  • 1 cup breadcrumbs (plain or Italian-seasoned) Can substitute with crushed crackers or oatmeal.
  • 2 large eggs
  • 1 medium onion, diced Diced small and sautéed well for flavor.
  • 2 tbsp soy sauce Low-sodium recommended.
  • 1 tsp salt
  • 1 tsp black pepper

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  • Sauté diced onions in a skillet over medium heat until soft (about 5 minutes).
  • In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
  • Shape the mixture into a loaf form in the greased baking dish.
  • Sprinkle remaining Parmesan cheese on top. Optionally add paprika or Italian seasoning for extra flavor.

Baking

  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before slicing.

Notes

Store any leftover meatloaf in an airtight container in the refrigerator for 3-4 days. Freeze slices for up to 3 months, and thaw in the refrigerator overnight when ready to eat.
