Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour plus 2 tablespoons
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 4 tablespoons unsalted butter softened, at room temperature
  • 1/2 cup granulated sugar plus 2 tablespoons
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-ins

  • 10 pieces Oreo or chocolate sandwich cookies coarsely chopped
  • 1/2 cup white chocolate chips

Instructions
 

Preparation

  • Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • In a small bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt. Set aside.

Mixing

  • In a large mixing bowl, beat together the butter and sugar on medium speed until combined.
  • Add the egg and vanilla extract and mix until smooth, making sure to scrape the sides of the bowl.
  • Reduce to low speed and gradually add the dry ingredients to the wet ingredients until just combined.
  • Fold in the chopped cookies and white chocolate chips until evenly dispersed.

Baking

  • Use a small cookie scoop to portion the dough and roll into balls. Gently press down on the cookies.
  • Bake for 8-10 minutes, until the edges are set. Allow to cool for a few minutes before transferring to a wire rack.

Notes

Serve these cookies warm with a glass of milk or display them on a platter for guests. Drizzle with melted white chocolate or dust with powdered sugar for a festive touch.
