Delightfully crunchy and creamy, these Cookies and Cream Cookies combine chocolate sandwich cookies with white chocolate chips for an indulgent treat.

Ingredients
  

Dry Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 4 tablespoons unsalted butter (softened, at room temperature)
  • 1/2 cup + 2 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-ins

  • 10 pieces Oreo or chocolate sandwich cookies (coarsely chopped)
  • 1/2 cup white chocolate chips

Instructions
 

Preparation

  • Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats.
  • In a small bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  • In a large mixing bowl, beat together the softened butter and granulated sugar on medium speed until well-combined and fluffy.
  • Add the egg and vanilla extract and mix until smooth, scraping the sides of the bowl as needed.
  • Reduce the mixer speed to low and gradually add the dry ingredients to the wet ingredients until just combined.
  • Fold in the chopped Oreo cookies and white chocolate chips until evenly distributed.
  • Use a small cookie scoop to portion out the dough, rolling them into balls and placing them on the prepared baking sheets. Press down slightly on the cookies.

Baking

  • Bake for 8-10 minutes or until the edges are set. Allow to cool on the baking sheets for a few minutes before transferring to a wire rack.

Notes

For a thicker cookie, chill the dough for 30 minutes before scooping. Adjust sugar content for less sweetness or add nuts for a different texture.
