Equipment :
Popover pan
Medium mixing bowl
Whisk
Measuring cups and spoons
Pastry brush
Sharp knife
Oven
Ingredients :
3 large eggs, room temperature
1 tablespoon unsalted butter, melted and cooled, plus extra for greasing the pan
1 cup all-purpose flour
1 cup whole milk, room temperature
1/2 teaspoon kosher salt
3/4 cup grated cheddar cheese
1/4 cup finely minced chives
4 slices bacon, cooked and crumbled
Instructions :
Preheat the oven to 450°F.
In a medium bowl, whisk together the eggs and cooled melted butter.
Add the flour, milk, and salt and whisk just until blended.
Gently fold in the cheddar cheese, chives, and bacon, being careful not to overmix.
Place the popover pan in the oven for 2–3 minutes to heat.
Remove the pan and generously grease the popover cups with melted butter.
Fill each cup about two-thirds full with batter.
Bake for 15 minutes, then reduce the oven temperature to 350°F.
Continue baking for 20 minutes, until the popovers are puffed, golden brown, and crisp.
Remove from the oven and cut a small slit in the side of each popover to release steam. Serve immediately.
Tips & Notes :
Do not open the oven door while baking, or the popovers may collapse.
Use a popover pan—muffin tins will not give the same rise.
Room-temperature ingredients help achieve maximum puff.
