  • 1 bunch fresh parsley (finely chopped)
  • 1 bunch fresh cilantro (finely chopped)
  • 4 cloves garlic (minced)
  • 0.5 cup red onion (finely chopped)

Sauce Base

  • 0.5 cup olive oil (as base)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon smoked paprika
  • 1 teaspoon red pepper flakes (adjustable) Adjust according to your heat preference.

Preparation

  • In a large mixing bowl, combine the finely chopped parsley, cilantro, minced garlic, and red onion.
  • Add the olive oil, red wine vinegar, smoked paprika, and red pepper flakes to the mixture.
  • Season with salt and pepper to taste, and mix thoroughly until all ingredients are well combined.
  • Allow the chimichurri to sit for at least 30 minutes to let the flavors meld together before serving.

Notes

Store chimichurri in an airtight container in the refrigerator for up to a week. The flavors improve as it sits. For longer storage, freeze in ice cube trays.
