Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, sauté until translucent.
  • Add broccoli florets and stir for a few minutes.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce heat and simmer until broccoli is tender, about 10-15 minutes.
  • Use an immersion blender to puree the soup until smooth.
  • Season with salt and pepper to taste.
  • Serve warm, topped with Parmesan cheese if desired.

Notes

For a richer taste, consider adding a splash of cream or Greek yogurt before serving. This soup stores well in an airtight container in the refrigerator for up to 3 days.
