Ingredients
  

Base Ingredients

  • 2 tablespoons olive oil
  • 1 onion chopped onion
  • 2 pieces carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 piece bell pepper, chopped

Vegetable Ingredients

  • 1 piece zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14.5 ounces) diced tomatoes

Broth and Seasoning

  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste freshly cracked pepper

For Garnish

  • to taste fresh parsley for garnish

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, diced carrots, and diced celery; sauté for about 5 minutes until softened.
  • Add minced garlic and chopped bell pepper, cooking for an additional 2 minutes.

Cooking

  • Stir in diced zucchini, chopped green beans, and diced tomatoes.
  • Pour in vegetable broth and add dried thyme, dried oregano, salt, and pepper. Bring to a boil.
  • Reduce heat and let simmer for about 15 minutes or until vegetables are tender.
  • Adjust seasoning as needed and serve hot, garnished with fresh parsley.

Notes

Consider roasting some of the vegetables beforehand to enhance flavor. For added heartiness, grains like quinoa or brown rice can be included.
