  • Season each veal cutlet with salt and black pepper.
  • Place 1 slice smoked mozzarella on each cutlet.
  • Add 1 rosemary sprig, then roll the veal up tightly. Pierce the roll to secure it, using the rosemary sprig like a 'skewer'.

Cooking

  • Heat 1 tbsp olive oil in a pan over high heat.
  • Sear the veal rolls on each side over high heat for about 5 minutes total, until browned and the mozzarella starts to melt.

Notes

For best results, consider marinating the veal cutlets in olive oil, garlic, and lemon juice for an hour or two before cooking. Serve with a light salad or garlic mashed potatoes for balance.
