Valentine's Day Cake

Ingredients
For the Cake
- 2 cups all-purpose flour
- 1.5 cups granulated sugar
- 0.5 cups unsweetened cocoa powder
- 1.5 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs Can substitute with applesauce or flaxseed mixture.
- 1 cup whole milk At room temperature.
- 0.5 cups vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water Batter will be thin.
For the Frosting
- 1 cup butter, softened Let it sit at room temperature for about 30 minutes.
- 4 cups powdered sugar
- 0.5 cups heavy cream
- to taste red food coloring Adjust for desired color.
- Heart-shaped decorations (optional) For decoration.
Instructions
Preparation
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
- Carefully stir in boiling water (the batter will be thin).
- Pour the batter evenly into the prepared pans.
Baking
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool for 10 minutes in the pans, then remove from pans to cool completely on wire racks.
Frosting
- For the frosting, beat butter until creamy. Gradually add powdered sugar and cream, mixing until smooth and fluffy.
- Add red food coloring to achieve the desired color.
- Frost the cooled cakes and decorate with heart-shaped decorations if desired.

Notes
Store in an airtight container at room temperature for up to three days or refrigerate for about a week. Let come to room temperature before serving.
