Ingredients
  

Brownie Base

  • 170 g unsalted butter, melted and allowed to cool
  • 250 g caster sugar
  • 2 large eggs
  • 125 g dark chocolate (minimum 50% cocoa), melted and cooled
  • 100 g plain flour
  • 30 g cocoa powder
  • 1 tsp salt
  • 80 g milk or dark chocolate chips

Cookie Dough Layer

  • 70 g unsalted butter, softened
  • 90 g light brown sugar
  • 1 unit egg yolk
  • 1 tsp vanilla extract
  • 80 g plain flour
  • ½ tsp baking powder
  • 70 g milk or dark chocolate chips, plus a little extra for the top

Instructions
 

Preparation

  • Heat the oven to 190°C (170°C fan) / 375°F / Gas, 5. Line a 20 cm square baking tin with nonstick baking paper.
  • To prepare the brownie batter, whisk the melted butter and caster sugar in a large bowl until well blended.
  • Add the eggs and beat until the mixture becomes pale, thick, and noticeably fluffy.
  • Stir in the melted dark chocolate.
  • Sift in the flour, cocoa powder, and salt. Gently fold everything together until just combined, then mix in the chocolate chips.
  • Set the batter aside.

Cookie Dough Preparation

  • Beat the softened butter with the brown sugar until light.
  • Add the egg yolk and vanilla, mixing just until incorporated.
  • Fold in the flour and baking powder until almost combined, then add the chocolate chips and mix until evenly spread through the dough.

Assembling the Brownies

  • Transfer the brownie batter to the lined tin and level the surface.
  • Take small portions of cookie dough, about ½ tablespoon each, and roll them into little balls. Scatter them over the brownie batter, spacing them out so some brownie remains visible.
  • Finish with a sprinkle of extra chocolate chips.

Baking

  • Bake for about 30 minutes, until the top looks set, the edges are cracked, and the cookie dough pieces are golden.
  • Let the brownies cool fully in the tin, then refrigerate for at least 2 hours for a firmer texture and neater slices. Overnight chilling works even better.
  • Slice into 16 squares before serving.

Notes

For an elevated presentation, serve warm with a scoop of vanilla ice cream or drizzle with chocolate or caramel sauce. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
