  • 1 pound ground spicy Italian sausage
  • 3 cloves garlic, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5-6 cups chicken stock
  • 2-3 cups fresh kale, chopped
  • 1 cup heavy whipping cream
  • Salt and black pepper to taste
  • 6 pieces cooked and crumbled bacon (for garnish)

Preparation

  • In a large stockpot over medium-high heat, cook the ground sausage until browned. Remove with a slotted spoon and set aside.
  • Sauté the diced onion in the reserved grease for about 5 minutes until softened. Add minced garlic and sauté for another minute.
  • Return the cooked sausage to the pot along with diced potatoes and chicken stock. Bring to a simmer; cook until potatoes are tender, about 10 minutes.
  • Stir in kale and heavy cream; simmer for an additional 5 minutes until heated through. Season with salt and pepper.
  • Ladle into bowls and garnish with crumbled bacon before serving.

Notes

Tuscany Soup is perfect for any occasion and can easily be stored in the refrigerator for 3-4 days or frozen for 2-3 months. When reheating, add extra chicken stock or cream if necessary.
