For the Soup

  • 1 pound ground spicy Italian sausage
  • 3 cloves garlic, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • Salt and black pepper to taste
  • 6 pieces bacon, crumbled

Preparation

  • In a large stockpot over medium-high heat, cook the sausage until browned. Transfer to a plate, reserving 1 tablespoon of grease.
  • Sauté onions in the reserved grease for about 5 minutes; add garlic and cook for another minute.
  • Add potatoes and chicken stock along with the cooked sausage to the pot. Bring to a simmer and cook until potatoes are tender (about 10 minutes).

Final Steps

  • Stir in kale and heavy cream; simmer for an additional 5 minutes. Season with salt and pepper.
  • Ladle into bowls, garnishing with crumbled bacon before serving.

Notes

Serve hot, optionally garnished with fresh parsley or crushed red pepper for extra heat. Pair with crusty bread or a side salad for a complete meal.
