Ingredients
  

For the Turkey

  • 2 pieces turkey thighs, boneless and cut into bite-sized pieces
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp chili powder
  • 1 cube chicken bouillon, crushed
  • ½ tsp salt
  • Reserved turkey bones and skin

For the Broth

  • 1 small handful chopped onion
  • 1 piece carrot, sliced
  • 2 cloves garlic
  • 1 piece fresh ginger
  • 1 cube chicken bouillon
  • ½ tsp salt
  • 3 cups water

For the Rice and Vegetables

  • 2 large tomatoes
  • 3 cups rice
  • 1 cup turkey broth
  • 1 cup water
  • 1 pinch of salt
  • 1 tbsp cooking oil
  • Extra chopped onion for sautéing
  • 2 cloves garlic, minced
  • Prepared pepper blend
  • ½ tsp salt
  • 1 cube chicken bouillon
  • 1 tsp paprika

Preparation

  • Remove the bones from the turkey thighs and cut the meat into small chunks. Keep the bones and skin for the broth.
  • Season the turkey pieces with garlic powder, onion powder, paprika, chili powder, crushed bouillon cube, and salt. Toss well until evenly coated, then let it rest.

Broth

  • Prepare the broth by adding the turkey bones, onion, carrot, garlic, ginger, bouillon cube, salt, and water to a pot.
  • Simmer for about 15 minutes, then strain and reserve the liquid.

Rice and Vegetables

  • Blend the red bell peppers, tomatoes, and habanero into a slightly chunky mixture. Set aside. Dice the remaining vegetables separately.
  • Wash the rice thoroughly, then cook it with the turkey broth, water, and a little salt until tender. Fluff the rice and keep it aside.
  • Heat oil in a large pan and fry the seasoned turkey pieces until lightly browned and fully cooked. Remove from the pan and set aside.
  • In the same pan, sauté onions and minced garlic until fragrant. Add the blended pepper mixture, then season with salt, paprika, and bouillon cube. Cook for 8–10 minutes until thickened and flavorful.
  • Stir in the cooked turkey along with the chopped red and green bell peppers. Cook briefly so the flavors combine.
  • Add the cooked rice to the pan and mix thoroughly until everything is evenly combined and heated through.

Notes

For a colorful presentation, consider arranging the rice in bowls, topped with extra sautéed vegetables. A sprinkle of fresh herbs can elevate the dish further. You may also offer additional sauces or hot sauce on the side for guests who enjoy an extra kick.
