Ingredients
  

For the Sandwich

  • 8 slices whole-grain bread, lightly toasted
  • 1 Hass avocado Hass avocado, halved and pitted
  • 1/2 cup nonfat plain Greek yogurt
  • 12 ounces deli-sliced low-sodium turkey breast
  • 8 slices turkey bacon Cooked until crisp
  • 1/2 small English cucumber, sliced
  • 8 small leaves romaine lettuce
  • 1 tomato tomato, cut into 8 slices
  • 1/3 cup thinly sliced red onion Soaked in vinegar for milder flavor
  • 2 tablespoons apple cider vinegar
  • Kosher salt and freshly ground pepper To taste

Instructions
 

Preparation

  • Soak the thinly sliced red onion in apple cider vinegar and 2 tablespoons of water for 15 minutes, then drain.
  • Cook turkey bacon according to the package instructions until crisp.
  • Mash the avocado with Greek yogurt until smooth; season with salt and pepper to taste.

Assembly

  • Spread the avocado-yogurt mixture on 4 slices of toasted bread.
  • Layer on fresh romaine lettuce and tomato slices; season lightly with salt and pepper.
  • Add the turkey breast, crispy turkey bacon, cucumber slices, and the drained red onion on top.
  • Close the sandwiches with the remaining slices of bread (spread-side down) and cut each sandwich in half.

Notes

These sandwiches can be served fresh or prepped ahead of time. Store ingredients separately for best results. Customize with spices or different breads for variety.
