Ingredients
  

For the Marinade

  • 1/4 cup soy sauce
  • 1/4 cup fish sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon sesame oil

For the Chicken

  • 2 lbs chicken thighs
  • Chopped cilantro for garnish

Preparation

  • In a bowl, whisk together soy sauce, fish sauce, brown sugar, honey, lime juice, garlic, ginger, red pepper flakes, and sesame oil to create the marinade.
  • Place the chicken thighs in a large resealable bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 1 hour, or overnight for best results.

Cooking

  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade and let excess marinade drip off.
  • Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and caramelized.
  • Transfer chicken to a serving platter and garnish with chopped cilantro.

Notes

Marinate the chicken for at least one hour for optimal flavor. Use cooking oil on the grill to prevent sticking. Adjust red pepper flakes to taste for spice.
