  • 3 large sweet onions (such as Vidalia), sliced into ¼-inch rings
  • 4 tablespoons unsalted butter (melted)
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup Monterey Jack cheese (shredded)
  • ½ cup Parmesan cheese (grated)
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning (or a dried thyme/oregano blend)
  • ¼ teaspoon paprika
  • Pinch of salt and black pepper (to taste)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly butter or spray a 9x13-inch baking dish.
  • Arrange the sliced onion rings in the dish, spreading them out evenly.
  • Pour the melted butter over the layered onions, and sprinkle with garlic powder, Italian seasoning, paprika, salt, and pepper.
  • In a separate bowl, mix the cheddar, Monterey Jack, and Parmesan cheeses together and scatter generously over the seasoned onions.

Baking

  • Cover the baking dish loosely with foil and bake for 30 minutes.
  • Remove the foil and continue baking for another 15 to 20 minutes until the top is golden and bubbly.

Serving

  • Allow the dish to cool for about 5 minutes before serving.

Notes

For variations, consider adding other vegetables or using different types of cheese. Ensure you store leftovers in an airtight container for 3 to 4 days.
