  • 2 medium Cucumbers Fresh and crisp
  • 8 oz Mozzarella cheese Cut into bite-sized pieces
  • 1 cup Cherry tomatoes Halved
  • 1 cup Fresh basil Torn leaves

Dressing

  • 3 tbsp Olive oil For drizzling
  • 2 tbsp Balsamic vinegar For drizzling
  • to taste Salt For seasoning
  • to taste Pepper For seasoning

Instructions
 

Preparation

  • Slice cucumbers and mozzarella into bite-sized pieces.
  • Halve the cherry tomatoes and add to the bowl.
  • Tear fresh basil leaves and mix with the vegetables.
  • Drizzle with olive oil and balsamic vinegar.
  • Season with salt and pepper to taste.
  • Toss everything together and serve chilled.
