Preparation

  • In a bowl, combine yogurt, garlic, ginger, lemon juice, hot paprika, cumin, garam masala, and cayenne pepper.
  • Add the chicken thighs to the marinade, ensuring they are well coated. Seal and refrigerate for at least two hours or up to overnight for best results.

Cooking Chicken

  • Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side or until cooked through and lightly charred.
  • Set aside to rest before slicing into bite-sized pieces.

Baking Pizza

  • Preheat your oven to 400°F (200°C). Meanwhile, warm the naan bread slightly.
  • On each piece of naan, spread a generous layer of mozzarella cheese and top with sliced chicken, diced mango, and red onion.
  • Bake in the oven for about 5-7 minutes or until the cheese is melted and bubbling.
  • Remove from the oven and drizzle with fresh mint and cilantro before serving.
