Swiss Bacon Mushroom Meatloaf

  • 2 lbs ground beef 80/20 preferred for juiciness
  • 1 cup shredded Swiss cheese
  • 1 cup cooked bacon, chopped
  • 1 cup mushrooms, sliced and sautéed
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • to taste Salt and pepper
  • optional Fresh parsley, for garnish

Preparation

  • Preheat oven to 375°F (190°C). Line a baking sheet with foil or use a loaf pan.
  • Cook bacon until crispy. Remove and set aside. Sauté mushrooms in the bacon fat until browned.
  • In a large bowl, combine ground beef, eggs, breadcrumbs, onion, garlic, Worcestershire sauce, salt, and pepper.
  • Gently mix in half of the shredded Swiss cheese.
  • Shape mixture into a loaf on the baking sheet. Press the rest of the cheese, mushrooms, and bacon on top.

Baking

  • Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).
  • Rest for 10 minutes before slicing. Garnish with parsley and serve.

Notes

For the best flavor, sauté onions and mushrooms to a golden brown. For a spicier kick, add hot sauce or jalapeños. Store leftovers in an airtight container for up to 4 days.
