For the Creamy Garlic Potatoes

  • 2 cups potatoes, diced Choose starchy potatoes for fluffier mash.
  • 2 tablespoons butter Use unsalted butter for better flavor control.
  • 1/2 cup cream Can substitute with low-fat milk or Greek yogurt for a lighter version.
  • 2 cloves garlic, minced
  • 1 cup shredded cheese Cheddar or your choice of cheese.
  • Salt and pepper to taste Salt and pepper to taste
  • Chives for garnish Chives for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, place the chicken breasts and cover with BBQ sauce.

Cooking

  • Bake for 25-30 minutes, or until cooked through.
  • While the chicken is baking, boil the diced potatoes in salted water until tender.
  • Drain the potatoes and return to the pot.
  • Add butter, cream, garlic, salt, and pepper. Mash until creamy and stir in cheese.

Serving

  • Serve the BBQ chicken on plates with a side of creamy garlic potatoes, garnished with chives if desired.
