Ingredients
  

For the Blueberry Syrup

  • 2 1/4 cups blueberries Fresh or frozen
  • 1 cup granulated sweetener Adjust based on preference
  • 1 cup filtered water
  • 1 tsp lemon juice

For the Soda

  • 1 cup club soda Well carbonated
  • 1/4 cup sugar free blueberry syrup Homemade syrup
  • 3 tbsp half & half Can substitute with coconut cream or almond milk
  • 1/4 cup whipped cream Optional for topping

Prepare the Blueberry Syrup

  • In a medium-sized saucepan, combine water, granulated sweetener, and lemon juice, stirring until combined.
  • Add fresh or frozen blueberries and stir.
  • Bring the mixture to a simmer on low-medium heat for about 15 minutes, stirring occasionally.
  • Using a wooden spoon or potato masher, mash the blueberries to release their juice.
  • Increase the heat to medium and let it simmer for another 8-10 minutes.
  • Remove from heat, allow to cool, and strain using a fine mesh strainer.

Serve the Drink

  • Cool the syrup in the refrigerator for 1-2 hours before using.
  • Add 3-4 cubes of ice to a tall glass.
  • Fill half the glass with club soda.
  • Add the homemade sugar-free blueberry syrup.
  • Slowly pour in the half & half.
  • Top with whipped cream if desired.

Notes

For best flavor, serve immediately after preparation. Can be garnished with fresh blueberries or mint.
