Main Ingredients

  • 6 large large tomatoes Choose beefsteak or vine-ripened for best flavor.
  • 10.5 oz ground sausage Can also substitute with other meats or meat alternatives.
  • 1 medium onion (finely chopped)
  • several sprigs flat-leaf parsley (chopped)
  • 1 clove garlic (minced)
  • 1 slice stale white sandwich bread (crumbled)
  • Kosher salt For seasoning and drawing out moisture.
  • Black pepper To taste.
  • Olive oil For drizzling before baking.

Instructions
 

Preparation

  • Cut the tops off the tomatoes and hollow them out with a spoon.
  • Sprinkle the inside of the hollowed tomatoes with kosher salt and turn them upside down to drain their juices.
  • In a bowl, mix together ground sausage, chopped onion, parsley, minced garlic, and crumbled bread. Season with black pepper and adjust seasoning as needed.
  • Stuff each hollowed tomato with the sausage mixture and place the tops back on.

Baking

  • Arrange the stuffed tomatoes in a baking dish and drizzle with olive oil.
  • Bake in the oven at 400°F (200°C) for 30 minutes.

Notes

Serve individually or family-style. Pair with a mixed greens salad or crusty bread. Best enjoyed within 3 days if stored in the refrigerator.
