  • 1/4 cup lime juice Fresh lime juice preferred
  • 1/2 cup sour cream To create the dressing
  • 1 tsp smoked paprika For flavor in the dressing

Preparation

  • In a large bowl, combine the cooked shredded chicken, street corn, and lime juice. Mix thoroughly.
  • In a separate bowl, mix the sour cream, smoked paprika, salt, and pepper to create the smoky dressing.

Assembly

  • Layer the cilantro lime rice in serving bowls.
  • Add the chicken and corn mixture on top.
  • Drizzle the smoky dressing over it and finish with any optional toppings.
  • Serve immediately for the best flavor.
