Strawberry Chocolate Almond Butter Bars

Ingredients
  

For the Batter

  • 113 g melted unsalted butter (about 8 tbsp)
  • 125 g natural salted almond butter well mixed
  • 200 g light brown sugar packed
  • 1 large egg (kept cold)
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • ½ tsp fine sea salt (add a pinch more if using unsalted nut butter)
  • ½ tsp ground cinnamon
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • 128 g all-purpose flour (about 1 cup)

For the Toppings

  • 128 g dark or semisweet chocolate chips
  • 55 g sliced almonds lightly toasted
  • 2 tbsp freeze-dried strawberries crushed
  • Flaky sea salt for finishing

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F) and prepare an 8×8-inch baking pan by greasing it and lining it with parchment paper.
  • In a large mixing bowl, combine melted butter, almond butter, and brown sugar, mixing until smooth and uniform.
  • Add egg, vanilla extract, almond extract (if using), fine sea salt, and ground cinnamon, whisk until glossy and well blended.
  • Incorporate baking powder and baking soda, gently fold in all-purpose flour until no dry streaks remain.
  • Press the thick batter evenly into the prepared pan and smooth the surface.

Baking

  • Bake for about 23–28 minutes until the surface is golden and set.
  • Right after baking, scatter chocolate chips over the hot surface and let rest for around 5 minutes to melt.
  • Spread the melted chocolate evenly, then sprinkle with toasted almonds and crushed freeze-dried strawberries.
  • Finish with a pinch of flaky salt and gently press toppings into place.

Cooling

  • Allow to cool slightly for about 15 minutes, then chill in the refrigerator for about 20 minutes until chocolate firms up.

Serving

  • Slice into bars and store in an airtight container at room temperature for up to 4 days or in the fridge for longer freshness.
