Creamy Base

  • 4 oz cream cheese, softened Use high-quality cream cheese for best results.
  • 1 can sweetened condensed milk
  • 1/2 cup half-and-half
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups heavy cream Whip until stiff peaks form.

Strawberry Filling

  • 30 medium fresh strawberries, hulled and cut into small pieces Use ripe strawberries for optimal flavor.

Preparation

  • In a medium bowl, whisk the softened cream cheese for about 1 minute until smooth and fluffy.
  • Add the sweetened condensed milk, half-and-half, and vanilla extract, then whisk until fully blended. Set aside.
  • In a separate bowl, use a stand mixer or hand mixer to whip the heavy cream until stiff peaks form, about 60 to 90 seconds.
  • Gently fold the cream cheese mixture into the whipped cream until the base is smooth and free of lumps.
  • Fold in the chopped strawberries evenly.

Molding and Freezing

  • Spoon the mixture into ice cream bar molds and insert the wooden sticks.
  • Freeze uncovered for 3 to 5 hours, or until fully firm. Overnight freezing also works well.

Serving

  • Remove from the molds and serve immediately. Keep any extra bars in a covered freezer-safe container for up to 2 weeks.

Notes

For optimal texture and flavor, enjoy the bars within the first week. Consider pureeing a portion of the strawberries for a stronger flavor and color throughout the base.
