  • 600 g starchy potatoes, peeled Russet or Idaho potatoes are ideal for this recipe.
  • Enough for deep frying vegetable oil Use enough oil to fully submerge the potato strips.
  • To taste salt Lightly sprinkle salt while the potatoes are still hot.

Preparation

  • Cut the peeled potatoes into very thin strips, similar to shoestring fries, and place them in a bowl of cold water as you work.
  • Once all the potatoes are sliced, drain them and rinse well under running water to wash away excess starch.
  • Pat the potato strips completely dry with paper towels or a clean kitchen towel.

Cooking

  • Heat the oil to 190°C / 375°F in a deep fryer or a large heavy pan.
  • Fry the potatoes in small batches for around 3 minutes, or until crisp and lightly golden.
  • Remove with a slotted spoon and let them drain on paper towels. Sprinkle with salt while still hot.

Notes

Serve fresh for the best texture. Store leftovers in an airtight container lined with paper towels for up to 1-2 days.
