Ingredients
  

For the filling

  • 1 pound ground turkey Lean protein base for the dish.
  • 4 ounces thin rice noodles Cook as per package instructions.
  • 2 tablespoons roasted peanut oil or vegetable oil For cooking the turkey and vegetables.
  • Juice of 3 limes limes Adds acidity and brightness.
  • 4 teaspoons teriyaki sauce For flavoring.
  • 1 small jalapeño pepper Adjust according to desired spice level.
  • 1 2-inch piece ginger Peeled, for added flavor.
  • 1 medium onion Thinly sliced.
  • 2 medium bell peppers 1 red, 1 yellow, for color and sweetness.
  • ¼ cup roasted unsalted cashews Roughly chopped, adds crunch.
  • ½ cup fresh cilantro and/or mint Chopped, for freshness.
  • 2 romaine lettuce hearts Leaves separated for cups.

Instructions
 

Preparation

  • Cook the noodles according to the package directions, then drain and toss with 1 tablespoon of roasted peanut oil.
  • In a small bowl, whisk together lime juice and 2 teaspoons of teriyaki sauce.
  • Finely chop or pulse the jalapeño, ginger, and lime zest until minced.

Cooking

  • Heat the remaining 1 tablespoon of roasted peanut oil in a large nonstick skillet over medium-high heat. Cook the onion until soft, about 5 minutes.
  • Add the ginger-jalapeño mixture and cook until toasted, about 1 minute.
  • Add the bell peppers and cook, stirring, for about 3 minutes.
  • Add the turkey and the remaining 2 teaspoons of teriyaki sauce; cook until the turkey is cooked through, about 5 minutes.
  • Remove from heat and stir in the lime mixture, cashews, and herbs.

Assembly

  • Spoon the noodles and turkey mixture into lettuce leaves and serve with lime wedges.
