Egg Ingredients

  • 4 pieces Eggs (large)

Sauce Ingredients

  • 1 tablespoon ketchup
  • 1.5 tablespoons soy sauce
  • 0.5 tablespoon rice vinegar
  • 1 teaspoon sugar (optional) For sweetness; can be omitted.
  • 1 tablespoon garlic (minced)
  • 1.5 tablespoons homemade chili oil Adjust for desired spice level.
  • 0.25 cup water
  • 2 tablespoons corn starch

Garnishes

  • to taste Green onion or cilantro For garnish.

Instructions
 

Preparation

  • In a bowl, mix ketchup, soy sauce, rice vinegar, sugar, garlic, homemade chili oil, water, and cornstarch.

Cooking

  • Drizzle oil into a pan and turn the heat to medium-high; once the oil is hot, add in the eggs and pan-fry for 2-3 minutes or until the edges become crispy.
  • Pour on the sauce, and let it simmer for another 2-3 minutes or until the sauce has thickened.

Serving

  • Garnish with green onion, cilantro, and sesame seeds; serve on top of hot rice.

Notes

Best enjoyed fresh from the pan. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
