Ingredients
  

For the Shrimp

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 small tortillas Warm before serving

For the Mango Salsa

  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 medium jalapeño, minced Adjust to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped For garnish

Preparation

  • In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper.
  • In another bowl, combine diced mango, red onion, jalapeño, lime juice, and cilantro to make the salsa.
  • Warm the tortillas in a dry skillet or microwave.

Cooking

  • Heat a skillet over medium-high heat and cook the shrimp until pink and cooked through, about 2-3 minutes per side.

Assembly

  • Assemble the tacos by placing shrimp in each tortilla and topping with mango salsa.
  • Serve immediately and enjoy!

Notes

Store leftover shrimp and salsa separately in airtight containers. Shrimp lasts up to two days, salsa should be consumed within 1-2 days for freshness.
