  • 1 cup all-purpose flour
  • 1 cup cornmeal Use stone-ground for best texture.
  • 1 cup sugar Adjust to taste.
  • 2 tsp salt
  • 1 tbsp baking powder (aluminum-free) Ensure it is fresh for proper rising.

Wet Ingredients

  • 3 large eggs
  • 1 cup milk Consider using buttermilk for a richer flavor.
  • 2 tbsp sour cream
  • 8 tbsp unsalted butter Melt 7 tbsp; keep 1 tbsp for greasing skillet.
  • 2 tbsp vegetable oil

Preparation

  • Preheat the oven to 350°F (175°C). Melt 7 tablespoons of butter and place the remaining tablespoon in a cast iron skillet in the oven.
  • In a large mixing bowl, combine all dry ingredients: flour, cornmeal, sugar, salt, and baking powder. Make a well in the center.
  • Add eggs, milk, and sour cream into the well and whisk until smooth.
  • Pour in melted butter and vegetable oil; mix until fully incorporated.

Baking

  • Carefully pour the batter into the preheated skillet and bake for 25-30 minutes, until golden brown.

Notes

Serve warm with honey butter, or alongside fried chicken and collard greens. For a twist, consider adding jalapeños or cheese to the batter.
