  • 1 onion 1 onion (chopped)
  • 1 drizzle 1 drizzle of olive oil
  • 2 apples 2 apples (diced)
  • 1 sweet potato 1 sweet potato (peeled and cubed)
  • ¾ inch ¾ inch (2 cm) fresh ginger (sliced or grated)
  • Water (enough to cover)
  • 3 tbsp 3 tbsp coconut milk

Preparation

  • Gather all your ingredients and prep them for cooking. Peel and cube the sweet potato, dice the apples, and chop the onion.
  • Slice or grate the ginger, depending on your taste preference.

Cooking

  • In a large pot over medium heat, drizzle a little olive oil. Sauté the chopped onion for about 5 minutes until translucent.
  • Incorporate the diced apples, cubed sweet potato, and fresh ginger into the pot.
  • Pour enough water into the pot to cover all the ingredients, and allow it to simmer.
  • Cook over medium heat for approximately 30 minutes, or until the sweet potato is very tender.
  • Stir in the coconut milk and blend everything until smooth, being careful while blending hot ingredients.

Notes

Garnish with a swirl of coconut milk, fresh herbs, or toasted pumpkin seeds when serving. Store leftovers in the refrigerator for 3 to 5 days or freeze for up to three months.
