  • 4 pieces boneless, skinless chicken breasts can use thighs for richer flavor
  • 1 cup long-grain rice can substitute with brown rice but may require longer cooking time
  • 2 cups chicken broth add more if rice is undercooked
  • 1 piece lemon (juiced and zested) for bright flavor
  • 2 cloves garlic (minced)
  • 1 piece onion (chopped)
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon dried thyme can use fresh if available
  • 1 teaspoon dried rosemary can use fresh if available
  • to taste Salt and pepper for seasoning
  • for garnish Fresh parsley adds color and freshness

Instructions
 

Preparation

  • In a slow cooker, heat olive oil over medium heat. Sauté chopped onion and minced garlic until fragrant.
  • Season chicken breasts with salt, pepper, lemon zest, thyme, and rosemary. Place them in the slow cooker.
  • Add rice, chicken broth, and lemon juice. Stir gently to combine.

Cooking

  • Cover and cook on low for 4 to 6 hours or until the chicken is cooked through and rice is fluffy.

Serving

  • Garnish with fresh parsley and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze in airtight containers for up to 2-3 months.
