  • 3 cups diced potatoes (fresh or frozen) Essential for texture.

  • 1 medium onion (chopped) Adds depth of flavor.
  • 1 packet taco seasoning Adjust amount for spiciness.

Instructions
 

Preparation

  • Brown the ground beef and chopped onion in a skillet over medium heat until fully cooked. Drain any excess fat.
  • Transfer the browned beef to your slow cooker.
  • Add the black beans, diced tomatoes, frozen vegetables, diced potatoes, taco seasoning, salt, and pepper to the slow cooker.
  • Stir everything together until well mixed.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  • About 30 minutes before serving, sprinkle the cheese on top and cover until it melts.
