  • 1 lb ground beef Use fresh ground beef for best results.
  • 4 cups potatoes, diced Freshly diced potatoes recommended.
  • 1 can (15 oz) kidney beans, drained and rinsed Can substitute with other beans.
  • 1 can (15 oz) corn, drained Canned corn works best.
  • 1 can (10.5 oz) cream of mushroom soup Opt for low-fat for a healthier option.
  • 1 cup shredded cheddar cheese Add more for extra cheesiness.
  • 1 onion, diced Sweet or yellow onion.
  • 2 cloves garlic, minced Sautéing enhances flavor.

Spices

  • 1 tbsp chili powder Adjust for heat preference.
  • 1 tsp salt To taste.
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions
 

Preparation

  • In a skillet over medium heat, brown the ground beef and ensure it is cooked through. Drain any excess fat.
  • In your slow cooker, start layering the ingredients: first add the diced potatoes.
  • Next, add the cooked ground beef, kidney beans, corn, diced onion, minced garlic, and all the spices.
  • Pour the cream of mushroom soup over the top of the layered ingredients.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  • In the last 30 minutes of cooking, sprinkle the shredded cheddar cheese on top and cover until melted.

Notes

Store leftovers in an airtight container. Can customize with different vegetables or beans. Optional garnishes include shredded cheese, green onions, or sour cream.
