For the Beef Ramen

  • 1 pound beef (chuck or brisket), cut into chunks
  • 4 cups beef broth Use high-quality beef broth for deeper flavor.
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste Experiment with different types of miso for unique flavors.
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, grated
  • 4 ounces ramen noodles Add noodles 30 minutes before serving.

For Toppings

  • Soft-boiled eggs For topping.

Preparation

  • In a slow cooker, combine the beef chunks, beef broth, soy sauce, miso paste, garlic, and ginger.

Cooking

  • Cover and cook on low for 6-8 hours or until the beef is tender.
  • About 30 minutes before serving, add the ramen noodles to the slow cooker.
  • Once the noodles are cooked, serve the ramen in bowls, topped with soft-boiled eggs, fresh greens, crunchy vegetables, green onions, and sesame seeds.

Notes

Store leftovers in airtight containers; separate broth and noodles to prevent sogginess. Keep in fridge for up to three days or freeze for longer storage.
