Ingredients
  

Gummy Base

  • 1.5 cups Applesauce Use fresh, quality applesauce.
  • 2.25 cups Sugar Accurate measurement is essential for texture.
  • 2 boxes Lime Jell-O (3 oz boxes) You can use other flavors for variety.
  • 2 packs Unflavored Gelatin

Tools

  • 1 piece Shamrock Cookie Cutter Dip in sugar to prevent sticking.

Instructions
 

Preparation

  • In a saucepan, combine applesauce and sugar over medium to high heat.
  • Stir until the mixture reaches a boil and then boil for one minute.

Setting

  • Remove from heat and pour into a parchment-lined 13×9 baking dish.
  • Place in the refrigerator to cool for about 2 hours or until fully set.

Cutting

  • Lift the set mixture from the baking dish using the parchment paper.
  • Dust the top with sugar to prevent sticking and use the shamrock cookie cutter to cut out shapes.
  • Roll each gummy shamrock in sugar to coat the edges.
  • Set gummies aside on a parchment-lined cookie sheet.

Notes

These gummies can be stored in an airtight container in the refrigerator for up to two weeks. You can freeze them for longer storage. If desired, reduce sugar or use a sugar substitute to make them healthier.
