  • 4 pounds beef brisket Choose a well-marbled brisket for maximum flavor and juiciness.
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 cup beef broth or red wine Use for moisture during cooking.

Preparation

  • Preheat the oven to 300°F (150°C).
  • In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme.
  • Rub the spice mixture generously all over the brisket, ensuring it’s well coated.
  • Optionally, wrap the brisket tightly in plastic wrap and refrigerate overnight to allow the flavors to meld.

Cooking

  • In a large skillet over medium-high heat, sear the brisket on all sides until browned, about 3-4 minutes per side.
  • Transfer the brisket to a roasting pan and pour the beef broth or red wine around it.
  • Cover the roasting pan tightly with foil to keep the moisture in, and place it in the oven.
  • Cook the brisket for 4 to 6 hours, or until it’s tender and reaches an internal temperature of at least 190°F (88°C).

Serving

  • Remove the brisket from the oven and allow it to rest for at least 20 minutes before slicing against the grain.
  • Serve with your favorite sides and enjoy the rich, flavorful meat.

Notes

For best results, do not rush the seasoning process and allow brisket to rest after cooking for juicier slices. Adjust spicy notes per preference.
