  • 200 g lean ground beef Use turkey or chicken for a leaner option.
  • 2 medium potatoes, diced skin on Ensure to toss with olive oil and seasonings.
  • 1 cup broccoli florets Can use fresh or frozen broccoli.

Seasonings

  • 2 tbsp olive oil
  • 1 tsp dried oregano Consider using fresh herbs for more flavor.
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt & black pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the diced potatoes with olive oil, oregano, thyme, garlic powder, salt, and black pepper in a bowl.
  • Spread the seasoned potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.

Cooking

  • In a skillet over medium heat, cook the ground beef, breaking it up as it cooks. Season with salt and pepper until no longer pink.
  • In a separate pot, boil water and steam the broccoli florets for 2-3 minutes until bright green and tender-crisp.

Serving

  • Arrange the ground beef, crispy roasted potatoes, and steamed broccoli on a plate. Adjust seasoning with extra salt and pepper if needed.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months. Reheat before serving.
