Ingredients
  

Rice and Base Ingredients

  • 1.5 cups jasmine rice Rinse before cooking
  • 2 tablespoons butter Divided into two tablespoons
  • 2 cups water or broth Vegetable or chicken broth can be used
  • 1 teaspoon salt To taste
  • 0.5 teaspoon black pepper To taste

Onion and Seasoning Ingredients

  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (optional)
  • 1 tablespoon fresh parsley, chopped (optional) For garnish

Instructions
 

Preparation

  • Rinse the jasmine rice in cold water 2-3 times until the water runs clear. Drain and set aside.
  • Thinly slice the onion and mince the garlic for even cooking.

Cooking Onions

  • In a large saucepan or deep skillet, melt 1 tablespoon of butter over medium-low heat.
  • Add the sliced onions with a pinch of salt and cook for 10-15 minutes until golden brown and soft.
  • Add minced garlic in the last minute of cooking and stir until fragrant.
  • Transfer the caramelized onions and garlic to a small bowl and set aside.

Cooking Rice

  • In the same pan, melt the remaining tablespoon of butter over medium heat.
  • Add the rinsed and drained jasmine rice, stirring for 1-2 minutes to toast slightly.
  • Pour in 1 ½ cups of broth (or water) and stir to combine.
  • Bring to a gentle simmer, reduce heat to low, cover, and cook for 15 minutes or until liquid is absorbed.
  • Turn off heat and let rice rest (covered) for 5 minutes.
  • Gently fluff rice with a fork and stir in caramelized onions and garlic.
  • Season with salt and black pepper to taste.
  • Optional: Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to two months.
