For the Chicken

  • 1.5 lbs Boneless Skinless Chicken Thighs
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Salt
  • 1/2 tsp Cracked Black Pepper
  • 1 tsp Paprika
  • 1 tbsp Olive Oil
  • 2 tbsp Butter

For the Sauce

  • 8 oz Brown Mushrooms
  • 4 cloves Minced Garlic
  • 1/2 cup Dry White Wine or Chicken Broth Use chicken broth for a gluten-free option.
  • 1/4 cup Fresh Parsley Chopped, for garnish.

Instructions
 

Preparation

  • Season the chicken thighs with onion powder, garlic powder, thyme, rosemary, salt, black pepper, and paprika. Let marinate for a few minutes.
  • Heat olive oil in a skillet over medium-high heat.

Cooking

  • Sear chicken thighs for 6-7 minutes on each side until cooked through and golden brown. Remove from skillet and set aside.
  • Add butter to the skillet and melt, scraping up any bits from the chicken.
  • Add brown mushrooms and sauté until golden, about 5-6 minutes.
  • Stir in minced garlic and cook for an additional minute.
  • Deglaze the pan with white wine or chicken broth and reduce slightly.
  • Return chicken thighs to the skillet, allowing them to warm up and meld with the mushroom sauce for a few minutes.
  • Garnish with fresh parsley before serving.

Notes

For a complete meal, pair with creamy mashed potatoes or roasted vegetables. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
