Ingredients
  

For the Chicken

  • 4 chicken thighs Juicy and flavorful
  • 2 tablespoons olive oil For searing the chicken
  • 1 teaspoon garlic powder For seasoning
  • 1 teaspoon paprika For seasoning

For the Rice and Beans

  • 1 cup rice White or brown rice, adjust cooking time for brown rice
  • 2 cups chicken broth For cooking the rice
  • 1 cup green beans, trimmed Fresh green beans for a crunchy texture

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Season the chicken thighs with salt, pepper, garlic powder, and paprika.

Cooking

  • In an oven-safe skillet, heat the olive oil over medium heat and sear the chicken thighs for 5-7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.
  • Add the rice and chicken broth to the skillet, stirring to combine.
  • Place the chicken thighs back in the skillet on top of the rice.
  • Cover and transfer to the oven, baking for 25 minutes.
  • After 25 minutes, add the green beans to the skillet and return to the oven for an additional 10-15 minutes until the chicken is cooked through and the rice is tender.

Notes

For best flavor, ensure the chicken is well seasoned. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, microwave until warmed through.
