  • 1 cup Irish Whiskey Bourbon can be used as a substitute.

  • 1 cup Chicken Broth Vegetable broth can be used for a vegetarian option.
  • 1 medium Onion (finely chopped) Yellow onions are preferred.
  • 2 cloves Garlic (minced) Fresh is best, but jarred can work.
  • 2 tablespoons Olive Oil Can substitute with neutral oil.

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then place them in the skillet. Sear until golden brown on both sides, approximately 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

Cooking

  • Pour in the whiskey, scraping any brown bits from the bottom of the skillet to incorporate the flavor. Allow the whiskey to reduce slightly, about 2 minutes, before adding the heavy cream and chicken broth. Stir to combine and let simmer for 5-7 minutes until the sauce thickens slightly.
  • Return the chicken to the skillet, coating it in the sauce. Simmer for an additional 10 minutes to ensure the chicken is cooked through and warmed thoroughly.

Serving

  • Garnish with freshly chopped parsley before serving.
