Steak Ingredients

  • 1 piece bone-in rib eye steak (2 pounds, 1 1/2 to 2 inches thick) Look for a steak with good marbling.
  • 2 teaspoons kosher salt
  • 1 teaspoon coarsely cracked black peppercorns Freshly cracked is preferred.
  • as needed tablespoons vegetable oil For brushing the grill grate.
  • as needed teaspoons coarse sea salt For serving.

Instructions
 

Preparation

  • Pat the steak dry with paper towels and place it on a wire rack situated on a rimmed baking sheet.
  • Season with 1/2 teaspoon salt per side and let stand at room temperature for at least 1 hour.
  • Pat it dry again and reseason with 1/2 teaspoon salt per side and 1/2 teaspoon cracked peppercorns per side.

Cooking

  • For grilling, build a two-zone fire in a charcoal grill or heat a gas grill to high, leaving one burner on low. Brush the grill grate with oil.
  • Place the steak over higher heat, close the lid, and cook, flipping once, until nicely charred, about 3 to 4 minutes per side.
  • Move the steak to lower heat and cook, flipping once, for another 3 to 4 minutes per side.
  • Sear both edges for 1 to 2 minutes each.

Finishing

  • Transfer the steak to a cutting board and let it rest for at least 10 minutes.
  • Slice against the grain and season with coarse sea salt before serving.

Notes

Pair with sides like roasted vegetables or mashed potatoes. For wine, a robust red like Cabernet Sauvignon works well.
