For the chicken

  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup all-purpose flour For dredging
  • 2 teaspoons salt Adjust to taste
  • 1 teaspoon black pepper Freshly ground is best
  • 1 teaspoon garlic powder For flavor
  • 1 teaspoon onion powder For additional flavor
  • 1 piece egg For egg wash
  • 1 cup breadcrumbs For coating
  • Vegetable oil to taste for frying Use a high smoke point oil

Preparation

  • Begin by seasoning the flour with salt, black pepper, garlic powder, and onion powder.
  • In a separate bowl, beat the egg until smooth.
  • Dredge each chicken breast in the seasoned flour, dip in the beaten egg, and then coat in breadcrumbs.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through.
  • Remove from skillet, drain on paper towels, and serve hot.

Notes

To store, let the chicken cool before placing it in an airtight container. Will last in the fridge for up to 3 days; can be frozen for up to 3 months.
