Ingredients
  

For the Mango Salsa

  • 1 ripe mango 1 ripe mango, diced Look for a mango that is slightly soft to the touch.
  • 1/2 cup 1/2 red onion, finely chopped
  • 1 1 jalapeño, minced Adjust amount for desired spiciness.
  • 1/4 cup 1/4 cup fresh cilantro, chopped
  • 1 lime Juice of 1 lime
  • Salt and pepper to taste

For the Salmon

  • 2 fillets 2 salmon fillets Frozen fillets can be used, thaw completely before cooking.
  • Olive oil for cooking Drizzle over the salmon before baking.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix together the diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper to create the salsa.
  • Season the salmon fillets with salt and pepper, and drizzle with olive oil.

Cooking

  • Place the salmon on a baking sheet and bake for 15-20 minutes, or until cooked through.
  • Serve the salmon topped with mango salsa.

Notes

Store leftovers in separate airtight containers in the fridge. Salmon lasts 2-3 days; salsa is best consumed within 1-2 days.
