Ingredients
  

For the Salmon Patties

  • 15 oz canned pink salmon (liquid drained, bones removed)
  • ¼ cup flour
  • ½ cup panko breadcrumbs
  • ½ cup yellow onion (diced)
  • 3 tbsp bell pepper (diced)
  • 1 tsp Old Bay seasoning
  • ½ tsp garlic powder
  • 1 egg (whisked)
  • ¼ cup dill (chopped)
  • pinch salt & pepper

For the Tartar Sauce

  • ¼ cup mayo
  • 1 cup mayonnaise for serving
  • 1 tsp relish
  • 1 tsp capers
  • 1 tsp lemon juice
  • 1 tsp dijon mustard
  • chopped dill for garnish

Instructions
 

Preparation

  • In a bowl, whisk together all ingredients for the tartar sauce and set in the fridge until ready to use.
  • In another bowl, mix all ingredients for the salmon patties really well using your hands.
  • Shape the mixture into patties, about half an inch thick, making about 6-8 patties.

Cooking

  • Heat some cooking oil in a large pan over medium-high heat, just enough to cover the bottom.
  • Cook the patties for 2-3 minutes per side until golden brown and crispy, working in batches if necessary.
  • Serve hot with the chilled tartar sauce and enjoy!

Notes

For storing, let croquettes cool before placing them in an airtight container. They last 3 days in the fridge and can be frozen for up to 3 months.
