  • 1 kg new potatoes, cut into roughly 1.5 cm pieces Look for firm, unblemished potatoes.
  • 3 tablespoons olive oil
  • 3 large garlic cloves, chopped very finely
  • 1 tablespoon fresh rosemary needles, finely chopped More can be added to taste.
  • Sea salt flakes, to taste

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F).
  • Place the chopped potatoes in a roasting tray. Drizzle with the olive oil and season with sea salt flakes.
  • Toss well so the potatoes are evenly coated.

Roasting

  • Roast for about 25 minutes, until the pieces are nearly tender and starting to turn lightly golden.
  • Add the chopped garlic and rosemary, then mix well to distribute the flavors.
  • Return the tray to the oven and cook for another 10 minutes, until the potatoes are fully tender and nicely golden.
  • Serve immediately while hot.

Notes

For an elevated presentation, consider mixing in some fresh herbs like parsley or chives when serving. A drizzle of extra virgin olive oil or a sprinkling of parmesan cheese just before serving can enhance the dish.
